Quick and delicious option for lunch
Cooks: 20 minutes
Nutrition facts: Omega 3, calcium, iron, potassium, protein, Vitamin A, B, C, E, K, folic acid, fibre
1 1/2 cup of whole wheat flour
1 tablespoon of cornstarch
1 tablespoon of baking powder
1 cup of water
3 tablespoons of coconut oil (two extra for cook)
Fresh ground black pepper
A bunch of fresh organic spinach
1 small chopped onion
First, saute the chopped onion and the spinach with a tablespoon of coconut oil until golden with a pinch of salt and pepper.
Second, mix the rest of the ingredients and the mixture of spinach and onion in a blender for a few seconds until smooth.
Heat a non-stick pan on a medium heat, pour the extra coconut oil, then the mixture and cook for a minutes until it starts to look firm. Flipping the fritter over. Continue cooking until golden. Serve with your favorite dressing, vegetables, ham, cheese, poached egg, etc.
Note: Also you can use this recipe as appetizer, side dish, or for a fantastic brunch option.
For a full vegan récipe, replace the egg for 1 large tablespoon of apple/white vinegar.
